My Super Protein Veggie Salad

I've been working on developing some healthy recipes for myself and my family, or atleast healthier versions of some of our favorite recipes. I came up with this one night when I was craving soft boiled eggs on toast.

I made a salad of mixed field greens and diced roasted red peppers. I sprinkled some fresh squeezed lemon juice on the salad then drizzled on 1 tsp. of olive oil. While the eggs were boiling (2 eggs for about 4 1/2 minutes). I chopped up some leftover steak and heated it in a non stick skillet to warm it up then put it on the salad. When the eggs were ready, I put them on top of the salad. I thought it was delicious! When my husband got home later that night I made it for him and he loved it. It was quick, easy and satisfying. Hi Laura

Good for you for altering! Choosing no bread is great, well done. Making your own salad dressing also brilliant. Lime works well too.

If you are going to eat eggs - we do - just make sure you choose healthy ones. We go to a farmer's market and get eggs from free range, grass fed chickens with no hormones or steroids injected into them. Like "old-time" farm eggs my grandmother raised. The ones in regular stores are from chicken mills where they are kept in very small cages, low light, indoors their entire lives. They are pumped with hormones to make them lay more eggs and are treated very poorly. I don't want that in my body, nor do I condone that treatment of animals.

Same with beef - heavily loaded with chemicals. We rarely eat any red meat and when we do we choose bison, elk or something wild. Organic usually, and wild or grain fed. The beef herds in North america are so heavily full of disease we stay away from it altogether.

If you want more protein in your salad, try adding some chick peas or black beans instead of meat. Or choose lean organic chicken or bison. Then keep the portions of it small. No more than the palm of your hand.

do u think it will be nice and healthy if we add white pepper , cloves ,etc to salad will be fine

pre-ground pepper is not good for you (is rancid) use only pepper that you grind yourself in a pepper mill.

Yeah my mouth is watering now after readin full recipe. But I think you should shoot a photo and share with us as well. That will help us to imagine more efficiently ... lollzz

I read this recipe and noted it in my recipe book. May be this weekend I will try also and if they will like I will give them your name and told that friend of mine in a forum told me to do so. :D

I used to working in the Deli and they have Protein Salad that I want to share, it's pretty simple:

Bolied eggs
Romaine Lettuce ( chopped)
Red onions
Tomatoes
turkey breast (deli cuts)
chicken breast (deli cuts)
Swiss Cheese
Croutons (optional)

you can choose any kind of dressing, but I suggested low fat ranch or Italian. :)

simple yes - healthy NO

ALL deli meats have nitrates in them which are directly linked to causing stomach cancer. I know a guy that had 1/2 his stomach removed due to cancer and the first thing his doctor asked him was "do you eat deli meats?" if so stop.

they are also high in fat and salt and preservatives.

if you want meat on your salad - use a real turkey or chicken breast, not that processed crap.

Cheese - I recommend against any dairy foods - same reasons. High fat, high salt, high preservatives, highly processed, LOW nutritional value.

croutons - NOT good. Most are white bread which turns to sugar in the body almost immediately and acts like glue in the intestines. What that causes is your intestines to not function properly so any GOOD nutrition that you do eat, cannot be absorbed by the intestines and taken to the cells of your body. It just gets all bunged up in there and goes right out the other end.

dressing - I suggest NONE off the shelf. They almost ALL have MSG which causes all sorts of problems.

Make your own dressing from fresh squeezed lime or lemon juice, a dash of Braggs and a little virgin olive oil or sesame oil if you must. That's all you need.

BTW broccoli has a lot of protein, so do beans.

if you want a high protein salad - eat a bean salad.
