I've been working on developing some healthy recipes for myself and my family, or atleast healthier versions of some of our favorite recipes. I came up with this one night when I was craving soft boiled eggs on toast.
I made a salad of mixed field greens and diced roasted red peppers. I sprinkled some fresh squeezed lemon juice on the salad then drizzled on 1 tsp. of olive oil. While the eggs were boiling (2 eggs for about 4 1/2 minutes). I chopped up some leftover steak and heated it in a non stick skillet to warm it up then put it on the salad. When the eggs were ready, I put them on top of the salad. I thought it was delicious! When my husband got home later that night I made it for him and he loved it. It was quick, easy and satisfying.
