Some times I grill veggies then toss them into some cooked pasta add grated cheese and you have dinner. You could also do the same thing except chill the pasta and you have a quick and easy pasta salad. I like to cut the zucchini into planks so it's easier to handle them on the grill. Another good marinade idea if your in a hurry during the workeek is to use just about any salad dressing in the store. Just unscrew the cap and pour over your veggies and your done.
