Dark leafy greens have the highest nutrition density scores based on identified phytochemicals, antioxidant activity and total vitamin and mineral content. We should be eating dark leafy greens with each meal or at least a few times per day for optimum health.
According the Dr Joel Fuhrman, author of Eat to Live, Raw leafy green vegetables such as dark green salad mix, romaine lettuce, kale, collards, dandelion greens, mustard greens, spinach, Swiss chard, parsley and daikon greens fit the bill, with solid green vegetables being second highest on the chart.
Now, knowing that, do you eat them on a daily basis?
Would you know Kale if you saw it on your plate?
Or do you even eat vegetables at all?
It’s a good question and the source of this week’s poll.

Taking vegetarianism out of the picture for a moment. If you choose to eat meat (I do, on occasion), does this mean that you forgo including an abundance of dark leafy greens or other vegetables? or do you round out your meat consumption with high fiber vegetables and the nutrient dense vegetables as suggested above?
I’m curious.
A few times a month. I love my meat so I a salad is quite rare these days. I have steak / pork with broccoli and cabbage every single day though!

I eat greens 2-3 times a day.
I once believed that vegetables available were only frozen corn and vegetables that had reached their best before date!
I’ve just finished eight days total vegan and it wasn’t as hard for me as I thought it would be. I enjoyed the challenge and enjoyed the different choices! However, I’ve come to realize that I will still include some meat in my diet. 2-3 times a week instead of my seven days a week. I’ll choose chicken and lean beef. I will not be diggin’ in on the pork. ( This reminds me of Pulp Fiction at the moment)
Oh yes, I know and love the Kale!

something to consider when choosing your meat is organic. We eat only organic free range eggs at home. The chickens and cattle have so much poison put into them – I don’t want to put that into my body.
We also choose wild red meat if we eat it like bison or elk, organic where we can get it. Doesn’t have the hormones, steroids and beef herd diseases that are rampant.
Salads are the best invention on the planet. And I”m not talking the ones with nothing in it (i.e. classic ceasar). I’m talkin the ones with chicken, feta, olives, onions, MORE OLIVES. Absolutely love salads though. My friend and I actually have competitions to see who can make better salads. It’s kind of funny.
