Recipe: Tofu Scramble With Veggies And Dulse

Dulse is a red algae (seaweed) that grows on the northern coasts of the Atlantic and Pacific oceans. It is a well-known snack food, and in Iceland and has been an important source of fiber through the centuries. Dulse is a good source of minerals and vitamins compared with other vegetables and it contains all trace elements needed for humans with a high protein content. This tofu scamble with veggies and dulse can be eaten as a substitute for scrambled eggs.

1 tbsp sesame oil
1 package of soft tofu (plain)
2 cups assorted chopped veggies (use what you have in the fridge like: peppers, mushrooms, zucchini, onions, broccoli, kale, spinach, carrots, etc)
3-5 cloves of garlic chopped fine
2” piece of ginger, peeled and chopped fine
parsley for garnish
green onions chopped
sprouts of your choice (I used garlic sprouts)
dulse flakes
sauce of your choice (ideas: fresh homemade salsa, hot sauce, peanut sauce, tomato sauce, Braggs or just some olive oil and vinegar)

Heat oil and sauté garlic, ginger and veggies until just about tender. Add the tofu and mix, chopping up the tofu with your spatula as you stir it, just like scrambled eggs. Add any leafy green like kale or spinach at the end, along with dulse flakes. Put on the lid and steam until greens are tender and tofu is heated through.

Serve with sauce of your choice, green onions on top and sprouts around the side of the dish, and parsley if desired.

What the heck are dulse flakes and where do I get them?

As noted above, dulse is a type of seaweed. It is naturally salty so makes a great salt substitute when added to soups, stir fries, salads or dressings. You can buy it at a health food or organic store. Look for it in bags or a smaller shaker (sometimes with garlic added). Dulse is VERY high in calcium that is readily absorbed by the body as well – so it is very good for you. It can be found in some dietary supplements, where it is often referred to as “Nova Scotia Dulce”, it is a good source of dietary requirements, a handful will provide more than 100% of the daily amount of Vitamin B6, 66% of Vitamin B12, a day’s supply of iron, and it is relatively low in sodium and high in potassium.

What Is Tofu And Why Do I Want To Eat It?

Tofu is a soy based product that comes in many forms ranging from soft, medium and hard consistencies to smoked, flavored and dessert versions more like custard. Many vegetarians eat it in place of meat, as it is high in protein without any saturated fats or cholesterol. Plain tofu has little taste of its own and take on the flavor of the sauce you cook it with or add to it.
